The bakery’s unique flavour and rich history come from its accumulation of cultures and the many bakers who have worked there over the years. The magic begins with its building, which is made of wood and has more than a hundred years of history. It is also an example of French architecture in the region. The bakery was founded in 1901 by the El Boleo mining company, exploiting the copper deposits that still abound in this region.
The historical richness of the property is unique, and we are working with its owners to maintain it for its preservation. From the beginning, bakers used ingredients from France to ensure the highest quality of bread. Subsequently, the ingredients were imported from the United States.
The bakery, which is still family-owned and operated, is now in its third and fourth generations and has continued to evolve. Currently, Mexican ingredients are also used. More than a century after its founding, El Boleo continues to use the same ovens and shelves with which it was inaugurated.
Every day, in the early morning hours, the workers light the still-existing wood-fired ovens and prepare the dough for the different bread recipes.
Undoubtedly, one of the most popular breads in the establishment is pitahaya, which is the most requested by people due to its creamy texture and unique flavour. Around 5:00 a.m., the first customers arrive daily to “get their day off to a good start.”
