One of this municipality’s major tourist attractions and a symbol of the area is Panadera El Boleo, which currently has approximately 12,000 residents.

The mingling of cultures and the countless bakers who have travelled through the location give their products a distinctive flavour and a sense of history. The warm and inviting appearance of the wooden building is over a century old and represents French architecture in the region. The property is located in the historic centre of Santa Rosalia.

The mining company El Boleo, which exploited the abundant copper deposits, founded the bakery in 1901.

“The historical richness of the property is unique, and we are working with the owners to ensure its preservation.” They have always been of the best quality in French confectionery since their inception.

The bakery is handled by the third and fourth generations of this still primarily family-run company. It has evolved over the years and now only uses products from Mexico. To its credit, more than a century after its foundation, El Boleo continues to use the same ovens and shelves with which it was inaugurated.

Every day, in the early morning hours, the workers light the still-existing wood-fired ovens and prepare the dough for the different bread recipes.

But without a doubt, one of the most popular breads of the establishment is “La Pitahaya.” It is the most requested bread due to its creamy texture and unique flavour. Around 5 a.m., the first customers arrive daily to “get their day off to a good start.”
