The renowned MICHELIN Guide began in 1900 when brothers André and Edouard Michelin founded the tire company that bears their name. However, it was not until 1923 that the heading “Recommended Hotels and Restaurants” appeared in the travel guide. It was the first time that independent restaurants were mentioned because, until then, only restaurants inside hotels were mentioned.
In 1926, the guide began to rate the quality of establishments with stars, although initially, only one star was awarded. Five years later, the hierarchy of one, two and three stars was established, and in 1936, the criteria applied for granting these awards were published.
